The restaurant I’d like to talk about is Haidilao, literally, means treasure-hunting in the ocean. It’s a hotpot restaurant serving Sichuan cuisine spicy hotpot. It’s a nation-wide chain restaurant catering nearly 5 million customers around China every year.

The one I’d like to talk about is the oldest one housed in Beijing. It’s 3 kilometers from the city center and has been being there for 12 years.

As a hotpot restaurant, Haidilao puts a simmering(炖煮) metal pot at the center of the dining table. While the hot pot is kept simmering, ingredients are placed into the pot and are cooked at the table. The hot pot dishes here include thinly sliced meat, leaf vegetables, mushrooms, dumplings, and seafood. Vegetables, fish and meat should be fresh. The cooked food is usually eaten with a dipping sauce.
